CFS issues warning after dan dan noodles at Tseung Kwan O restaurant test positive for pathogen

7th January 2025 – (Hong Kong) Today, the Centre for Food Safety (CFS) of the Food and Environmental Hygiene Department reported that a sample of dan dan noodles was found to contain dangerously high levels of Clostridium perfringens, a harmful pathogen. The CFS is actively investigating the matter.

A spokesperson for the CFS stated, “In response to a related food safety incident, we collected the sample from a restaurant in Tseung Kwan O for testing. Results revealed Clostridium perfringens at a concentration of 180,000 per gram. According to the Microbiological Guidelines for Food, any ready-to-eat item containing over 10,000 Clostridium perfringens per gram is deemed unsatisfactory.”

The CFS promptly dispatched staff to the restaurant to conduct an investigation and collect additional food samples for laboratory analysis. The establishment has been notified of the findings and has ceased the sale of the affected product, subsequently disposing of it in line with CFS recommendations. Furthermore, the CFS has provided health education regarding food safety and hygiene to the restaurant’s management and staff, urging improvements in food preparation methods and thorough cleaning and disinfection procedures.

Clostridium perfringens is commonly found in the environment and poses a particular risk in bulk-prepared foods, especially cooked meats and poultry that have been stored at room temperature for extended periods post-cooking. Consumption of contaminated food can lead to symptoms such as abdominal pain and diarrhoea.
